Ingredients
  

For the Marinade

  • 1 whole whole chicken, cut into pieces Use your favorite cuts.
  • 1/4 cup olive oil Extra virgin for better flavor.
  • 4 cloves garlic, minced Freshly minced for best taste.
  • 2 tablespoons paprika Smoked paprika can be used for a deeper flavor.
  • 1 tablespoon dried oregano
  • 1 tablespoon chili flakes Adjust based on your heat preference.
  • to taste Salt and pepper Typically about 1 teaspoon salt and 1/2 teaspoon pepper.
  • 2 lemons juiced Freshly squeezed for best flavor.

Preparation

  • In a bowl, combine olive oil, minced garlic, lemon juice, paprika, oregano, chili flakes, salt, and pepper. Mix well to create the Peri Peri marinade.
  • Place the chicken pieces in a large resealable bag and pour the marinade over them. Ensure each piece is coated evenly. Marinate in the refrigerator for at least 2 hours, preferably overnight.

Cooking

  • Preheat your grill or oven to medium-high heat.
  • Remove the chicken from the marinade and grill or roast until cooked through, with beautiful char marks on the outside.

Serving

  • Serve your Peri Peri Chicken hot, garnished with fresh herbs and lemon wedges. Pair it with grilled vegetables or a side salad for a complete meal.

Notes

For the best flavor, marinate the chicken overnight. Use fresh ingredients like garlic and lemon juice for optimum results. Adjust the spice level according to your preference, and ensure the chicken's internal temperature reaches 165°F (75°C) for safe consumption.
