Ingredients
  

Main Ingredients

  • 4 pieces chicken breasts Juicy and boneless
  • 1 tablespoon olive oil For searing the chicken
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 pieces jalapenos, diced Adjust based on spice preference
  • 3 pieces peaches, diced Fresh is preferred, canned can be used

Sauce Ingredients

  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch For thickening the sauce

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Season the chicken breasts with salt and black pepper on both sides.

Cooking

  • In a large oven-safe skillet, heat the olive oil over medium-high heat.
  • Add the chicken breasts and sear for 3-4 minutes on each side until golden brown.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the diced jalapenos and peaches, and cook for 2-3 minutes until slightly softened.
  • In a small bowl, whisk together the honey, apple cider vinegar, water, and cornstarch until smooth.
  • Pour the honey mixture over the jalapenos and peaches and stir well.
  • Bring to a simmer, then return the chicken breasts to the skillet, spooning some of the sauce over the top.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through.
  • Remove from the oven and let it rest for a few minutes before serving.

Notes

Serve hot over rice or with fresh vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
