Mini Watermelon Slice Cookies

Since summer is in full swing, I thought it was about time for some refreshing seasonal treats. Mini watermelon slice cookies are the perfect size for snacking and they don’t take much time to make.

To make mini-slice cookies use a knife to cut simple circles into wedges. The size of the cookies will depend on what size cutter you use.

When it comes to circle cutters I love graduated sets because I always have the size I need. If you have a mini-watermelon cutter, that would work too.

I used a four inch round cutter so the baked cookies were about two inches in length.

Supplies Needed

To make these cookies you will need:

  • Bright pink/red 20-second icing {I mix super red with a touch of rose}
  • Stiff-ish green rind colored piping icing {I mixed leaf green with a little kelly green}
  • Stiff white piping icing
  • Black edible food marker or black royal icing {for seeds}

Decorating Instructions

Begin by flooding the wedges with pink 20-second icing and let dry.

To make the rind, position a #101 tip near the left corner of the cookie, thin side up. Slowly move up and down in a loose “M” shape until you reach the opposite side.

Use a boo-boo stick or toothpick to clean up any sharp points if necessary. If you’re new to petal tips, don’t let them intimidate you. Practice on a paper towel until you feel confident.

Add a thin white line between the pink and green using a #2 tip for that realistic watermelon look.

Finish up by using an edible black marker or tiny dots of black royal icing to create watermelon seeds. Place them randomly across the pink section.

Author’s Reply: The white line is actually Royal Icing- made the consistency of toothpaste. Once dried overnight, it is hard :).

Author’s Reply: Hi! I used Americolor brand almost exclusively for many years, but over time, I’ve branched out. While I still love my tried and true Americolor shades, I have tried and liked Chefmaster, Wilton Color Right, Progel, and even the Hobby Lobby store brand. For this combo, I specifically used super red, rose, leaf green, and kelly green. You can see an in-depth post of the process on the blog.

Marie: I baked the watermelon slices and froze them in June. However I got ill and was unable to ice them. I am wondering have you modified these cookies to create anything else besides watermelon? Now that I have recovered I was thinking Fall themed? Although I have frozen them adequately it’s time to use them? Can you help me with some ideas?
